What the words mean
A fire kitchen uses words that don't travel. Here's the short version.
- Mangal
- The open charcoal grill this kitchen cooks over. Live coals, not gas — that is where the char and the smoke come from.
- Kofta
- Ground meat and onion, seasoned, pressed along a flat skewer and grilled. Every fire-cooking culture has a version.
- Skewer
- Flat and wide, not round. It grips the meat so the skewer turns and the food turns with it.
- Sumac
- A dark red berry, dried and ground. Sour and bright — it does for grilled meat what lemon does for fish.
- Ayran
- Yogurt thinned with water and salted, served very cold. The standard drink alongside grilled meat.
- Filo
- Pastry rolled until you can read through it, then layered dozens deep with butter and nuts.
